• 2 medium beets, peeled and sliced into thin strips
  • 1 onion, sliced
  • 200g mushrooms, sliced
  • 4-5 garlic scapes, chopped
  • 2 tablespoons oil (vegetable or sesame)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or sugar (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving


  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the sliced beets and cook for 3-4 minutes, until they start to soften.
  3. Add the sliced onion and cook for another 2-3 minutes until it becomes translucent.
  4. Add the sliced mushrooms and chopped garlic scapes to the skillet. Cook for an additional 3-4 minutes until the mushrooms are tender.
  5. In a small bowl, mix together the soy sauce, rice vinegar, and honey or sugar (if using). Pour this sauce over the vegetables in the skillet.
  6. Stir everything together and cook for another 1-2 minutes until the sauce thickens slightly and coats the vegetables evenly.
  7. Season with salt and pepper to taste.
  8. Serve the stir-fry hot over cooked rice or noodles.
