Here’s a refreshing and delicious recipe that uses apples, strawberries, cucumbers, peppers, and tomatoes.  This salad is perfect for a light lunch or as a side dish for a summer meal.

Serves 4-6 people as a side dish


  • Salad:

    • 1 apple, cored and diced
    • 1 cup strawberries, hulled and halved or diced
    • 1 cucumber, diced
    • 1 bell pepper, diced
    • 1 cup tomatoes, finely diced
    • 1/4 cup red onion, minced or finely diced (optional)
    • 1/4 cup feta cheese, crumbled (optional)
    • 2 tablespoons fresh mint leaves, chopped (optional)
    • 2 tablespoons fresh cilantro or basil, chopped (optional)
  • Dressing:

    • 3 tablespoons olive oil
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon honey
    • Salt and pepper to taste


  1. Prepare the Salad:

    • In a large bowl, combine the apples, strawberries, cucumbers, peppers, and  tomatoes.
    • Add the red onion, feta cheese, mint, and cilantro or basil if using. Toss gently to mix.
  2. Make the Dressing:

    • In a small bowl or a jar with a lid, combine the olive oil, balsamic vinegar, honey, salt, and pepper.
    • Whisk together (or shake if using a jar) until well combined.
  3. Assemble the Salad:

    • Pour the dressing over the salad and toss gently to coat all the ingredients.
    • Taste and adjust seasoning if necessary.
  4. Serve:

    • Serve the salad immediately as a refreshing side dish or a light meal.
