Serves 4 as a side dish
Ingredients:
- ½ Cup Olive Oil
- 2 Tbsp Lemon Juice
- 2 Tbsp Balsamic or Red Wine Vinegar
- ½ Tsp each of Garlic Powder, Dried Oregano, Dried Dill
- Salt and Pepper to taste
- 1 Small Red Onion, peeled and minced
- 1 Pint Grape Tomatoes, quartered
- 1 English Cucumber, quartered lengthwise and cut into 1-inch pieces
- 1 Bell Pepper, cored and cut into 1-inch pieces
- ½ Cup pitted sliced Black Olives
- ½ Cup Crumbled Feta Cheese
- ¼ Cup Fresh Mint, thinly sliced (Optional)
Directions:
- Combine the Oil, Lemon Juice, Vinegar, and Spices in the bottom of a large bowl. The olives and feta will make this quite salty, so go light on the salt at first; you can always add more at the end.
- Add the Red Onion to the bowl and mix together. Leave for at least ten minutes while you chop everything else. The lemon juice in the dressing will take the sharpness out of the onion.
- Add the Tomatoes, Cucumber, Bell Pepper, Olives, and Feta, and toss thoroughly. Top with the mint if using. Enjoy!
